I love black beans, and this was a fantastic way to prepare them. So easy to make and perfect for a week night dinner. Who knew something so easy could taste so good ! Yes I know It doesn’t look so pretty, but once you put that first bite in your mouth though, you will be asking for more. This was surprisingly flavorful, but the cilantro is definitely a must. I think It’s not for you, if you don’t like cilantro, though, as that provides most of the flavor. We love cilantro, so it was perfect for us.
I sauteed my onions and garlic and cooked for about 5 minutes. I also rinsed the beans in cold water to clean off preservatives and decrease gas (this step does away with the “gas problem” a lot of people experience after eating beans). Added the rinsed beans, salt, cayenne pepper and added 1 cup of vegetable broth (could use chicken or beef) to replace liquid. I brought beans to a boil and then let simmer uncovered for 15 minutes to blend flavors. Then I added the cilantro. It smelled amazing when it was cooking and tasted just as amazing.
- 1 (16 ounce) can black beans
- 1 medium sliced onion
- 1 cup vegetable broth
- 1 tbsp olive oil
- 1 clove garlic chopped or 1 tsp garlic powder
- ¼ tsp cayenne pepper
- Salt to taste
- 1 to 2 tbsp chopped cilantro
- Saute the onions and garlic in olive oil over medium heat for 5 mins.
- Drain and rinse beans.
- Add vegetable broth, bring to a boil and simmer for 15 minutes.
- Just before serving stir in the chopped cilantro.
