Easy Mushroom Soup

This easy mushroom soup started as a very simple, quick recipe to use up mushrooms that I had on hand, but the results became outstanding. I think the best part is that this version did not require cream and was still delicious. Yes, of course It is not the most beautiful soup in the world but since it tastes so good no one seemed to care. Not only was this recipe amazing to eat, it warms the house with wonderful smells and aromas! It was great the first day but even better on the following. Super basic recipe – the quality here will depend on your ingredients and cooking. I had baby bellas on hand and used those (you can use portobello mushrooms, also you can get mushrooms that are already sliced to save some time ). If you’re a mushroom lover definitely use more than a pound of mushrooms. Fantastic with some french bread and a simple salad. Great winter treat!easy-mushroom-soup-2-425x640

Serves: 6-7
  • 1 cup sliced carrots
  • 3 garlic cloves, minced
  • 3 cups baby bella mushrooms
  • ½ cup onion minced
  • 5 cups vegetable broth
  • 1½ cups potatoes
  • ½ tsp red pepper
  • 1 tsp sea salt
  • 2 tbsp butter
  • 2 tbsp soy sauce
  • 1 tbsp chopped fresh dill or parsley
  • sliced lemon (optional)
  1. In a large saucepan, melt 2 tablespoons of the butter over medium heat, add the diced onions. Cook and stir about 3-4 min.
  2. Mix in the carrot, garlic and cook for 5 minutes.
  3. Add vegetable stock .
  4. Bring to a boil and add potatoes, mushrooms and soy sauce.
  5. Season with salt, pepper.
  6. Cover and simmer for 30-35 minutes over low heat.
  7. Serve mushroom soup garnished with a bit of fresh chopped dill.
  8. Also I added a slice of lemon to increase the freshness of it.
