Peanut Butter Cookies

These were yummy peanut butter cookies! Got so many compliments on these. My whole family loved them!! The cookies are well balanced chewy centers, crispy edges. Delicate peanut butter flavor. Melt in your mouth with just the right mount of crunch. Absolutely delicious. The problem is, you definitely should make these cookies a couple of times before you plan on taking them to any parties.Peanut Butter Cookies Putting the dough into the fridge is a must! otherwise it gets too gooey to roll into balls for baking. I chilled overnight, but you would be find with a few hours. Then I baked them at 350 for 6-7 minutes. When you take them out of the oven they are so soft, that they seem mushy just let them cool for 5-10 minutes on the pan before removing them as their temperature drops they firm up. Then they will be just the right crispiness on top but soft on the inside. If you leave them for longer the bottom will harden and burn a little. I watched them to make sure they weren’t burning. Also I dipped the cookie half way into melted semi-sweet chocolate… It has such a awesome look, it is hard to resist.Peanut Butter Cookies

  • 1egg
  • ½ cup crunchy peanut butter
  • ½ teaspoon vanilla extract
  • ½ cup unsalted butter
  • 1 cup sugar
  • 1½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  1. Preheat oven to 350 degrees.
  2. Cream peanut butter, butter, and sugar together in a bowl. beat in egg to mixture.
  3. In a separate bowl, sift flour, baking powder, vanilla extract and baking soda; stir into butter mixture. Cover and refrigerator for 1 hour (or overnight).
  4. Then roll dough into 1 inch balls and place on baking sheet.Then flatten each ball with a fork, making a crisscross pattern. Bake for 6-7 minutes.
