Roasted Broccoli (Vegan)

I love quick, simple, delicious and healthy recipes like this one! I made this last night for dinner. My family loves broccoli and we eat it often. I usually steam broccoli so I wasn’t sure if my family would like roasted broccoli. Preparing broccoli this way gives it a totally different flavor. Roasted Broccoli1I like my broccoli super crunchy, so I didn’t cook them much longer under the lid. These turned out crisp, not mushy and soggy. I added a little squeeze of fresh lemon juice at the end and it was yummy. There are really no words to describe how perfectly this cooks or how wonderful it tastes. Ingredients
  • 3 tablespoons water
  • 1⁄4 teaspoon salt
  • 1⁄2 teaspoon chopped fresh garlic
  • 3 tablespoons olive oil
  • 1⁄5 teaspoon pepper
  • 1 1⁄4lbs broccoli, separated into small florets,
  • 1 tablespoon lemon juice
Instructions
  1. Stir water, salt, and pepper together in small bowl until salt dissolves
  2. Heat the oil in a large nonstick skillet over medium heat.
  3. Add the garlic and cook, stirring constantly, until just golden
  4. Add the florets and don't stir for two minutes, until they just begin to brown.
  5. Add water spice mixture and cover skillet, cook for two minutes without stirring.
  6. Uncover and continue to cook until water has evaporated, broccoli florets are crisp,
  7. Off heat, add lemon juice.
