Roasted Broccoli (Vegan)

I love quick, simple, delicious and healthy recipes like this one! I made this last night for dinner. My family loves broccoli and we eat it often. I usually steam broccoli so I wasn’t sure if my family would like roasted broccoli. Preparing broccoli this way gives it a totally different flavor. Roasted Broccoli1I like my broccoli super crunchy, so I didn’t cook them much longer under the lid. These turned out crisp, not mushy and soggy. I added a little squeeze of fresh lemon juice at the end and it was yummy. There are really no words to describe how perfectly this cooks or how wonderful it tastes. It’s amazing how good broccoli can taste with minimal effort!Roasted Broccoli
