I made these Sliced Baked Potatoes for dinner tonight. I was just looking for a faster way to bake a potato, and this worked great! I love this way of baking potatoes really good alternative to a traditional baked potato. Slightly crispy peels and tender seasoned potato with great presentation. These are also called hasselback potatoes. I had no problems cutting the potatoes, but If you are having trouble making the cuts, an easy way to slice the potato without cutting all the way down is to put two wooden spoons along the sides of the potatoes, then when you slice down with your knife your wooden spoons will keep you from cutting too deeply.
I sliced the potatoes very thin and sprinkled them with salt, pepper, oregano and then drizzled them with olive oil(you can use whatever seasonings you like). I left the skin on. You can remove the skin or leave it on. I baked them 40 minutes and they smelled amazing while baking. Yum!
